RAVIGOTE SAUCE



A spicy sauce served hot or cold but always highly seasoned. Cold RAVIGOTE is vinaigrette mixed with capers, chopped herbs, and chopped onions. The hot sauce is made by adding veal velout sauce to equal quantities of white wine and wine vinegar, reduced with chopped shallots; it is finish with chopped herbs and served particularly with calfs head and brains and boiled fowl. Savory butter and mayonnaise à la navigate are flavored with chopped herbs and shallots, and sometimes with mustard.
