VINCENT SAUCE



The name of a mayonnaise that contains chopped herbs (chervil, chives, watercress, sorrel, and parsley), a little mint, sage, or burnet may also be added. All this herbs must be blanched for one minutes in boiling water, patted dry and reduced in pure. Chopped hard-boiled egg, mustard, vinegar, egg yolk, oil, and salt and pepper.

It is served with crudits, cold meat, and fish.
