BARBEQUE SAUCE



A thick and rich, piquant sauce of which there are many variations, but basically consisting of

TOMATO SAUCE, VINEGAR, OLIVE OIL, BRANDY, TABASCO SAUCE, CURRY POWDER, CHOPPED HERBS (such as CHIVES, TARRAGON, PARSLEY, and CHEVRIL), and very finely chopped onion (SCALLION). Seasoned with salt, and sprinkled generously with pepper.

This sauce is served with grilled (broiled meat and sausages.
