MALTAISE SAUCE



Is a HOLLANDAISE SAUCE flavoured with blood-orange juice and shredded rind, served with poached fish or boiled vegetables (such as asparagus, Swiss chard, and cardoons). The bombe glace à la MALTAISE is coated in orange ice and filled with tangerine-flavoured Chantilly cream.
